The Only Green Smoothie Recipe You Need

Self-Care Challenge #5

Merhaba (hello in Turkish!), everyone!

We are at our final week of the #MemoallureSelfCareChallenge! If you haven’t been following along, I would highly suggest you do this for your beautiful self! You deserve a moment to yourself.

This week, I am challenging you to make yourself a green smoothie throughout the week. Green smoothies are a great way to sneak in greens into your diet. They are also pretty versatile, so you can add in whatever you please. Now that it is the summer time, I always seem to be reaching more for smoothies in this hot weather.

You do not need to add in all the ingredients I did if you don’t have them. Get creative with it. I think the secret to making green smoothies not taste horrible is bananas and almond/peanut butter. It hides the flavor. Another trick I like to keep in mind is that, I don’t like to add more fruit than I would normally eat in one sitting. So think it through, how much fruit would you really eat, if you were just planning on eating fruit. And if you say, you eat too much fruit, then maybe follow the serving size.

Green Smoothie for health

For my green smoothie, I started with a base of kale and soy milk. You may use almond milk or any other milk you have on hand, I personally only had soy milk.

Then add almond butter, half scoop of protein powder, flax oil, wheat germ, green superfood packet, frozen banana and a little bit of frozen blueberries. The superfood packet, I received as a sample and wanted to give it a try, but it’s definitely not necessary as you are already putting in kale for your greens. I used my NutriBullet, which is AMAZING for smoothies. It just makes it so much easier and you can enjoy your smoothie right after you make it. Plus, less dishes to wash 🙂

After everything is blended, I like to add cacao nibs on top for a little bit of crunch. I know it may not look appetizing, but it tastes amazing. Like I’ve said, you cannot taste the greens.

That’s it, all you have left to do is enjoy! I would suggest maybe trying mindful eating practice from last week’s challenge while enjoying this. Did you know mindful eating can heighten your senses? I urge you to give it a try.

  • handful of kale or spinach
  • 1 cup dairy free milk
  • 1 spoonful of nut butter
  • 1 spoonful of flax oil
  • handful of frozen blueberries
  • 1 frozen banana
  • 1 spoonful of wheat germ
  • 1 packet of green superfood
  • 1/2 spoonful of protein powder (optional)

Topings: Cacao Nibs

Mix all together, and enjoy!

Get to Know the Face Behind Memoallure!

Hey there!

Thanks for visiting. 🙂 I’m really happy you’ve made your way into my little corner of the internet. 🙂

I thought it was a good time to let you guys into my world. Obviously, if you are not interested — that’s cool too!

I just want to clear something up, first and foremost, I have been hearing that people are calling my site Meeemo — pronouncing it like “Finding Nemo.” Lol. It’s not Meeemo! It’s memo — like the actual word, memorandum, and then allure. You might be wondering how I came up with that name? Well, with the help of a beautiful soul and my best friend, Kelsie, we were able to brainstorm a name that had a lot of meaning to me.

The Memo part comes from my family. It’s the first initial of my dad, mom, sister and my name. Growing up, we also used to call my dad, memo. His name is Mehmet (Turkish name), and it’s a common nickname for that particular name. I wanted a name for my site, that each time I looked at it, I would have a smile on my face — and it certainly does that.

Initially, I thought I may write about finance related topics along with the beauty part, but as of now, I am not going in that direction. So, the memo part, I thought was good in that it showcased the serious side of me and perhaps the finance part, all the while, having true meaning to my heart.

The allure part is the beauty and aesthetics part of me. I gained my license as an esthetician in 2013 and have loved all the experiences I was able to gain from it! With the license, I was able to work at Ulta Beauty Salon and do makeup for weddings/proms & facials then went on to work at Sephora as a skin care specialist and lastly at a laser clinic!


The thing is, doing makeup, hair and fashion was exciting for me as far as I could remember. I remember in middle school, I would always watch T.V. to get hair style ideas. My ideas would usually come from Lizzie McGuire! Gool ol’ days. 🙂 I aimed to have a different hair style everyday for school. It was so much fun for me. I also started getting into makeup in middle school as I had an older sister and learned quickly from her.

Now coming back to the present, I am currently working as a finance professional in Boston. Although, it is more accounting, I have noticed. I was always into math in school and actually found it “fun”, I know weird, but hence the reason I got into finance.

So, why did I start blogging? 

Well, after watching long hours of YouTube makeup videos, reading blogs, and inside me saying, repeatedly: “I would love to do that“; I knew it was time to take action. I, also, was in the midst of trying to figure out how I can help out my community and others, and this seemed like the perfect opportunity. One of my values in life is helping others, which is part of my core. I kept trying to figure out how I could, and I didn’t want to wait for the time to be “perfect” anymore, I knew I had to get started soon.

In the meanwhile, I have been serious about working on myself for the past 2 years. Everything I share with you guys about waking up early, listening to motivational clips, reading, going to the gym, writing, etc. — I have been incorporating into my daily routine for 2+ years. Even before that, I used to do it, but not as structured. I really got very serious about my routine in 2016, and noticed huge results. I knew that it was time to start sharing. What good would it do to the world, if I kept it all to myself?

Anyways, long story short, I see blogging as part of joining a community where I can help, motivate and reach others all over the world to live out their best lives, while making new connections!

Beauty is one of the greatest things we can experience in this life, but it can be quite subjective. I ran into this quote while I was still at esthetician school a few years back and for some reason, I’ll never forget that moment. I’m sure I’ve heard this saying before, but it really resonated with me back then. It kind of opened my eye to see that beauty isn’t what you think of it, it’s so much more, and in some way — that is beautiful.

I believe the vision of beauty is very narrow and it also does not need to have a big emphasis as our culture today puts it. What we see from the Kardashian’s to what we see from other Hollywood stars is harshly skewed.

We should make it a point to show the younger generation that there are things about them that are beautiful apart from their looks — like their kind heart, their giving heart, or how good they are at a particular sport. You know what my perception of beauty is? A big smile on someone’s face. That has to be one of the greatest things that both parties can experience. You can’t be sad looking at someone smiling, and the person smiling is naturally happier because of it.

There is beauty all around us. Whether that is the beauty of nature, beauty of a newborn child or the beauty of flowers — they all have a different meaning for everyone and they all have a unique feature that makes it beautiful for the one that is viewing it. This is why I believe this life is so magical. There is so much good, if you just focus on the good, you will see it as well. Check out my gratitude post, if you need help in this area.

Subjective beauty is kind of like growing up as a kid, and one of the most common questions you would get asked is; what is your favorite color? Well, everyone has a different color they choose and see as “beautiful”, it can also vary mostly between gender. Why? Because the beauty of a color is in the eye of the person that is viewing it.

Don’t ever let anyone tell you, you are not beautiful — it just means you’re not their cup of tea, which is normal and absolutely fine! This is why I put a big emphasis on self-love. If you have so much love for yourself, why does anyone else’s perception of you really matter? At the end of the day, people don’t think of you as much as you think they do. Everyone has their own struggles and problems to deal with. For the people who do obsess over your life, tell them to find a better hobby and perhaps it’s time they took a dab at self-improvement.

Growing up, my sister and I were always recognized for “our beauty”, I guess in some way we were blessed because society’s perception of us were positive. But apart from “our beauty”, we have so much more to offer, which you can’t just see by looking at us from the outside. On the inside, my sister has the kindest heart and is the most hardworking lady I know. She speaks so softly and basically melts your heart each time. If that is not beautiful, I don’t know what is. She also made beautiful little babies that I absolutely think are the most adorable little munchkins, but once again — that is my perception of beauty.

I want you to go on with your day, knowing you are beautiful and don’t listen to the negative committee in your head or what society may think of you. I personally think you are beautiful, even if I don’t know you because I think every human being is magical and beautiful in their own way.

Now, go and find what makes you beautiful and do exactly that and always stay positive.

Good Vitamins to Take Daily

Best Vitamins for Daily Use

Good morning, good afternoon or good evening people of the internet!

I’ve been taking vitamins for quite some time now, and I thought maybe you’d find some useful information with the ones I am taking. I always like seeing what other people take to see if it would be something that is helpful for what I lack. I try to stick to a healthy diet, but I also know I can’t always get all of my vitamins from one day of eating, so this way it ensures that I get what I really need.

*Disclaimer:  I am not a health care professional and these are vitamins that work for me currently, but please speak with your doctor for your needs.

The following are only vitamins I am taking in the moment, not necessary my all time favorite brands, but I will give you an update when I switch things around. These are still really good options, in my opinion, and have been working for me quite well.

Alright here we go….

1.Collagen by youtheory

Collagen has been increasingly becoming more popular lately and I totally understand why. This one by youtheory is great, you do notice the results of taking them, but the only issue I have with it is that you have to take 6 decent sized pills each time. It says you could take it through out the day, but I know I would forget to take it if I did that, so I try to take it all at once. Collagen is great for hair, skin and nails. This is known to be good for older women/men because as we age, we tend to loose more collagen – a major structural protein in the body. I’m not sure what it is really doing to me as far as the aging process, but I do notice my hair feels thicker when I take this.

2. Triple Strength Fish Oil by GNC

Ever since I learned Fish Oil was good for your skin, I haven’t stopped taking it. Well, I haven’t been as consistent as I would like, but I always try to have this on hand. Fish oil is great for heart, brain, skin, eye and joint health. I like this one because there is no weird aftertaste after you take it.

3. Magnesium by NatureMade

Magnesium is a hidden gem. It is great for calming your anxiety, helps constipation/digestion, helps muscle aches (great for all my gym peeps!), great when taking before sleeping as it aids in calming you, and helps with heart health. If you don’t currently take magnesium supplement, I believe I might’ve just convinced you to do so!

4. B-12 by mykind

I do not eat a lot of meat, so I try to make sure to take a B-12 supplement. For me, it was hard to remind myself to keep taking it so I decided to get the spray form, so I could take it even when I am running late and need to rush out of the house! The taste is fine to me, pretty good I would say, although, I would rather have a neutral flavor.

5. Chewable C by NatureMade

These are a fun way of taking Vitamin C. They are chew-able and taste like oranges. I like to take vitamin C whenever I feel like I am getting slightly sick. Not only does it help with your immune system, but it will also help with your stress. Vitamin C is a power house and I try to always take it when I can.

6. Vitamin D3 5000 IU by 365 Everyday Value (WholeFoods)

Most of us are deficient in vitamin D (although, you should always check with your doctor), and I like taking D3 to support my immune system, bone health/teeth, regulate insulin levels and reduce risk of flu. I’ve linked an alternative brand as Amazon does not have WholeFoods brands, but with the acquisition perhaps they will soon.

7. B Complex by Trader Joes

B complex is a group of 8 vitamin B’s. B vitamins allow your body to transform food into glucose, which aids in digestion and production of energy.  This will also aid with your anxiety and depression. Just a warning, this one will make your pee orange.

Arnold Schwarzenegger’s 6 Rules for Success

Famous for his rock-hard body and his famous line “I’ll be back” from the Terminator, he is one of the most inspiring human beings on Earth thus far. A man that always pushed his limits and never took the easy way out. I say “human being” and not only man because whether you are a female or male, you can replicate the persistent, hard-work, resilience and never give up attitude Arnold Schwarzenegger has.

Arnold Schwarzenegger is an Austrian-American actor, producer, businessman, investor, author, philanthropist, activist, politician and former professional bodybuilder. He was intense and wanted to always be number one whether as a movie star or as a bodybuilder. He had a burning desire to be part of something big, so he left Austria and came to America to follow his dream to live out the “American dream.” He did this by becoming a bodybuilder in which he saw as his way in. He wanted to be different, he was driven to think big and pushed his limits in every possible way. He constantly read books to figure out how to be the best body builder. At a young age, he decorated his bedroom wall with pictures of all his visions. His mother saw this and thought he had something wrong with him and brought a doctor to his house. The doctor said he was fine and that he was just different than most kids.

Later down the line, he took acting classes, English classes, classes to get rid of his accent and after the craziest amount of persistence, he finally broke through — even after people who have told him it would be impossible for him. He is one of the most intense human beings out there along with one of the hardest workers. He has truly lived out an inspiring “American dream.” I understand that there is some controversy with his personal life and his marriage, but I don’t think anybody has

For those of us that live in developed countries, we truly are blessed and I believe it is our duty to manifest our greatness and keep fighting through things that are “impossible.” Don’t ever settle. We as human beings are meant to thrive and succeed, so don’t settle for “Okay.” Keep searching for the “magical” and for the “amazing” and the “extraordinary” type of future for yourself. Don’t listen to what others are saying, including your parents. Keep listening to what you’re body is saying, you know best. Just GO FOR IT! If anybody tells you, you can’t do something, remind yourself of how much Arnold has accomplished and when everyone told him everything he accomplished was “impossible.”

Here are Arnold’s 6 Rules For Success:

  1. Trust Yourself

Arnold has advised all of us to dig deep down and search inside you. You have all the answers and ask yourself, who do you want to be? Not what your parents or what society wants from you, but think about what makes YOU happy, and do exactly that. It is easy to get lost in what other people want from you, but when you listen and trust yourself, it is then when extraordinary things start to happen. If you need help, maybe a good starting point would be reading one of the self-help books from my post.

2. Break the Rules

Always think outside the box. Stop hoping everyone will like you by staying on a path that others see you or on a path that is comfortable. Sometimes the path that others take doesn’t always mean that same path will work for you or is the one you should take. The famous quote “Well behaved women, rarely make history” does have some truth in it. The way I perceive that is if you keep taking the same path that you are “supposed” to take, then we won’t ever advance and see what gifts you could have given us by not being a risk-taker. As I get older, I am starting to realize that there is no “right” path to success. Success could mean you are the most compassionate, caring stay-at-home mom or it could mean you have built some of the most amazing things like Elon Musk. Either way, I think they are both great successes.

3. Don’t Be Afraid to Fail

Arnold always was willing to fail. Don’t be afraid of making decisions. It’s easier to change your path then not taking action because you are indecisive. Success will come in the process of your “failures.” Sometimes, the best chance we have for growth is when we “fail.” Keep trying, keep making time for self-improvement and keep pushing yourself to get one step closer to your goals. They say the way to improve yourself, is to better yourself. Don’t take self-improvement with a grain of salt. Take it full head-on.

4. Don’t Listen to the Naysayers

Stop listening to people who say “it can’t be done.” This is never true, and if you are the first one to do it, then you are the leader — and that is pretty amazing. Don’t take no as an answer. If Bill Gates or Henry Ford listen to the people who said it could not be done, then maybe the way we are living now would be much different. Remind yourself daily, yes you can! Post sticky notes around your house if you need the daily reminder. I did this to be able to wake up to the gym in the morning. I attached a sticky note saying “If not now, then when” near my bedside to get myself up to get my workout done. Do whatever works for you!

5. Work Your Butt Off

Arnold says you never want to fail because you didn’t work hard enough. It is important to have fun in life, but you have 24 hours in a day, and that gives you so much opportunity to accomplish a lot in those hours apart from the time you are sleeping. This is where “Early to bed and early to rise” can help you out a lot. If you need some help on how to wake up early, read my post here. I would also suggest that you listen to this the night before, so that when you wake up, this is the first thing on your mind. This video allows you to stop being stuck in your comfort zone. It’s always important to listen to things that will allow you to take action, to help you endure, to never give up, to have a winner’s mindset.  Now, that is not to say, you should feel “stuck” or not content where you are. I just want you to know you deserve to take action of your life. As Les Brown says, “You have greatness in you” and I truly believe you do.

6. You Must Always Find Time to Give Back

It is necessary to give back because you can’t be great if you are a hoarder. If you keep holding all that you know, then you can’t grow. Someone once told me that giving back is like a fountain. If you give back, then the fountain will flourish and new set of water will always come back. If you don’t give back, it’s stuck the way it is. Sure, giving back should be an altruistic, selfless notion, but the truth is that giving back is good for both the giver and the recipient. Giving back reduces stress, depression, blood pressure and so much more! It’s one of the keys to happiness hence why I believe it is on Arnold’s list.

As you go into this world, I hope you guys can remember to implement some, if not all, of these rules into your daily routines. Never stop working hard and never stop being who you are in the process.

Hey Everyone! 

Hope you are having an amazing weekend! Happy Father’s Day to all the amazing fathers out there 🙂 The weather today is perfect in Boston and a great day to enjoy the day with your loved ones!

Can you believe we are at the end of the self-care challenge? Only one more after todays self-care challenge!

If you are feeling up to it or want to catch up with us, here are the series 1- face mask, 2 – self-love meditation and 3 – gratitude.

For this week’s challenge, I want you to join me in eating mindfully. What does that mean? It means, for today and rest of the week, I want you to pay attention to what you are eating. Don’t eat in front of the T.V., in front of your desk at work, looking at your phone or doing anything else. 

I want you to sit at a table by yourself and enjoy your meal. With each bite, I want you to notice the little things about it. For example — what does it smells like, what does the texture feel like, how it feels going in your stomach, etc. Have you ever even noticed what a tomato smells like or how green lettuce can be? Too often, we rush through our meal which tends to lead us to overeating. Another instance that happens quite too often is we don’t notice how a particular food makes us feel and we ignore it. This, then leads us to not notice what our body is telling us about that particular food. It could be that your body is screaming for you to stop eating something that is not making you feel good and you’ve become so immune to it. I don’t want you to take any food groups out of your diet, but I do want you to eat less of things that don’t make you feel your best.

Ditch the over-eating habit….

Did you know by kicking your over-eating habit, you can improve your memory and reduce cognitive impairment? Yep, just by avoiding to feel overly full all the time, you can improve your health in ways that you did not think was affecting you. Why not take preventative care of yourself to avoid diseases such as Alzheimer’s now? Why wait till later? I think that is the best motivation to take care of yourself and your eating habits.

The best thing about mindful eating is you end up eating healthy without really even trying. Your body knows what’s best for you because it truly cares for you — stop ignoring it! Mindful eating allows your body to understand what is being put in it and therefore is able to better process/digest what you eat. Mindful eating also allows you to eliminate stress eating or emotional eating.

Some benefits of mindful eating:

  • Aid in staying at your healthy weight
  • Decrease excessive snacking
  • Stop emotional and overeating
  • Stop fast eating — which can lead to type 2 diabetes
  • Reactivate your hunger “cue”

Your instincts and satiety level know exactly what your body needs to feel nourished and knows exactly when to stop. Our ancestors were really good at this because they didn’t have distractions while eating nor did they have overly-processed options. Over time, we stopped listening to our “cue” and overeating became a habit. Our natural “cue” of eating allows us to eat when hungry and stop when full. Those signals, when ignored, become less active and you are not able to listen to it as much. This in turn, leads us to other types of cues to eat. Whether that is because you are bored, or you want to treat yourself, or a habit of eating exactly at 3pm (or whatever time) that cookie that you are not sure why you wanted it in the first place. The positive thing is you can rewire your brain to know how to stop eating when you are full. It’s pretty cool and it only takes a few practices. Don’t beat yourself up in the process. It’s going to take some time to get into a habit of it. If you are someone that suffers with emotional eating — don’t worry, you can do this! Mindful eating is the best way to get in touch with your soul and your body. 

How to Practice Mindful Eating

I highly encourage everyone to try this because I’m pretty sure all of us have been victims of overeating in front of the T.V. or any other time. Just keep being persistent and keep being mindful of what you eat for each practice. It’s amazing how you can stop when you are fully content and pretty amazing how you stop “craving” the not-so-healthy options. This in any means isn’t a “diet” you should be following. You shouldn’t be doing anything that doesn’t make you happy. This is only a way to nourish your body the right way and to take steps into incorporating self-love practice into your daily routine. 

Here are some steps you can take:

  1. Leave your phone in another room and shut off your T.V. or any other distractions.
  2. Sit at a table and look at your food – notice all the colors.
  3. With each bite, think of one word that you notice about that one bite.
  4. When you’ve reached about 80-90% fullness – get up and do something else. This will allow you to give you sometime to help you differentiate if you need to keep eating or if you are satisfied. More often than not – you are satisfied and don’t need to eat anything else. If you are full then you can get rid of anything else that you didn’t eat or if you are still hungry then listen to your body and do that.
  5. Eat slowly, and chew as much as possible.

By incorporating this into your daily routine, you will notice that you are more mindful in general. Mindful eating doesn’t end at what you put in your body, you start to notice other things about your body and how to do what your body is telling you to do. Like I’ve said, you’re body knows best, and being able to be more in tune with yourself is the most amazing experience.

What to Expect Climbing the Potato Chip Rock in San Diego

What to Expect Climbing Potato Rock Chip Hike

Potato Rock Hike

Time: 3-4 hours

Level: Moderate – Difficult

Height: 1,800 – 2,000 ft.

Hiking has to be one of the best exercises we can all do — and the best part? It’s free! You get a chance to reconnect with nature, enjoy the beautiful views and be able to have a moment to yourself. It’s truly amazing and the best way to get in touch with nature and this earth. You get to appreciate it for what it is and see how magical it really is.

Hiking Potato Chip Rock in San Diego has to be one of my favorite hiking experiences. It had the most amazing views of San Diego and even the drive there was equally amazing. It was breath taking (literally!) and I would do it again if I could!

I’ll be honest, it wasn’t an easy hike, and surprisingly going down was harder than going up due to the fact that it is so steep. Before we went on the trail, we asked a few people how long it took them and they said about an hour and a half to two hours. I’m not sure if they were athletes or not, but it definitely will take you longer than that! Especially in the hot weather, where you need to take frequent water breaks. It’s definitely a good workout for sure. My butt and legs were hurting for days after. We did this our second day there, and I wish we waited for our last day to do it, so that we would be hurting when we were home and not in San Diego!

The combination of the rocks and the view of San Diego was such a cool experience. I wanted to take more breaks to just enjoy the views, but I also couldn’t wait to see the “Potato Chip.” I think that’s what makes this hike so fun is because you can’t wait to see if it actually looks like a potato chip! Also, the photo op for this is unreal. So many choices!

Best Hiking in San Diego

Another tip — go there early morning before the sun is so strong! We got a pretty bad sunburn after this. Mostly because it was our first time in the sun for the summer, but also because we weren’t good with sunblock. It was also pretty crowded, especially afternoon. We got there I think around 10:30 which wasn’t bad, but it started to get busier once we reached the top. If you go earlier, you get to miss the crowd and you won’t be under so much heat. It would be even cooler if you went and saw the sun rise there!

Potato Chip Rock Hike

Expect a lot of panting and deep breathing because this hike is steeeeep. The plus side is that it has an easy path, so technically you’re not climbing — which is convenient and part of the reason why I really enjoyed this hike. Since it is steep, going down was so hard on our feet. I tried to run at some parts because it made it a little easier. This hike was also somewhat entertaining due to the fact that I am pretty scared of heights. Once you reach the top and get a chance to see the “chip”, you will realize that to get  on top of it, you need to climb up pretty high and it’s definitely not an easy climb. It’s scary to see that you’re about 2,000 ft. above ground! I’m sure some people would love that, but for someone who is scared of heights it’s not the greatest feeling at first. It felt like such a great accomplishment once we were able to get on it — and I’m happy Ian was there to comfort me. I definitely couldn’t have climbed by myself. If I lived in San Diego, I would do this hike all the time. Or at least once or twice a month. I loved it. Like I said, doing it right around the sun rise would be so ideal. I would definitely recommend that! Hope you guys can go and experience San Diego sometime in the future!

How to Take Breaks at Work

Hi guys!

The other day, I had to go into my doctors office due to my headaches and pain on my lower skull. Thankfully, it wasn’t a serious issue, but I wanted to share it with you guys so that you won’t have a problem like that and are more mindful with taking breaks at work. Apparently, I distressed the muscles in my lower brain, and, I was getting pain around that area and did not know why. My doctor told me it is due to the fact that I sit at a 9-5 job not moving much.

I used to take more breaks at my other job, but this one I only take one break per day and it’s usually not for too long. It is okay if you can’t take a break or if the nature of your job doesn’t allow you to, but be mindful of just taking a moment to yourself a few times a day. If you haven’t read my how to unwind and increase productivity post, I would suggest you start there.

Another thing my doctor suggested is that for every 20 minutes you work, you should take a 20 second break — not looking at your screen. Try to look somewhere far away like out the window. To make sure you don’t forget, I would suggest having an alarm on your phone. Maybe just for a few days, until it’s built in as a habit. Another thing to consider is to take a break every hour — even if it’s just for 3 minutes each time. That could be to socialize or to take a quick walk, or whatever that may be for you. Humans weren’t meant to be sitting down for so many hours in the day, but that’s what it has come down to for our generation unfortunately. So in order to stay healthy, I would highly suggest you follow these rules with me. Whether you work a 9-5 job or work from your laptop, it’s important to be mindful of our health.

Healthy Homemade Granola


Hey guys,

I’m coming at you with another recipe today! I know I’ve been MIA the past 2 days which is due to technical difficulties with my laptop, unfortunately.  In terms of the self-care challenge — it will be moved to next Sunday, which gives you more time to practice last week’s gratitude exercise.

Now to the recipe — I love using this granola for whenever I want cereal or healthier option instead of store bought. The best part is you get to control how much sugar is in it! This recipe is super simple and good amount for your whole family to enjoy. What I also enjoy about this is that it keeps you fuller than regular granola, due to the all the nuts and seeds in it. You can of course tailor this to however you’d like! Put whatever ingredients you please 🙂

First,  preheat your oven to 300 degrees Fahrenheit. Next, mix in your dry ingredients, minus the goji berries.

Then, mix in maple syrup, vanilla extract, cinnamon and salt.

Stir it all together and put it in a baking sheet with parchment paper (I ran out). Put it in the oven for 40 minutes — stirring every 10 minutes. Monitor it to make sure it doesn’t burn. Let it cool for a few minutes and add in your berries!

  • 3 cups rolled oats
  • 1/4 cup buckwheat groats (use more oats, if you don’t have this!)
  • 1/2 cup chopped almonds
  • 1/2 cup sunflower seeds
  • 1/2 cup coconut flakes
  • 1/2 cup maple syrup
  • 1/3 cup safflower oil or olive oil
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup goji berries or raisins or cranberries
  1. Preheat oven to 300 degrees F. Line a baking sheet with parchment paper.
  2. Mix together oats, seeds, nuts, coconut flakes, groats in a large bowl.
  3. Mix in maple syrup, vanilla extracts, cinnamon, oil and salt.
  4. Pour all of it on baking sheet and stick it in the oven for 40 minutes. Mixing ever 10 minutes and monitoring how toasted everything is.
  5. Mix in your berries and enjoy!

Healthy Vegan Lemon Coconut Cookies

Did you hear my girl Taylor Swift is back on Spotify?? I’m currently one of the happiest girls listening to her right this moment. I heard it was something to do with Katy Perry, but don’t really know what’s going on. Let me know if you have any idea why she decided to come back to Spotify!

Anyways, I’m coming at you today with an amazing cookie recipe. This is healthy and could be gluten free! I made my version vegan because it’s just how I roll, but feel free to use eggs. The flax eggs worked really well with this recipe. My sister, niece and nephew loved it! They didn’t even realized it was healthy until I named all the ingredients in it. I love the kick of lemon and coconut in this — such a great combination!

Alright, here is the recipe!

It’s super simple and doesn’t take too much time to put together 🙂

First, preheat your oven to 350 degrees Fahrenheit. Then, get ready the flax egg: for 3 “eggs” you will need 3 tbsp of flax meal and 9 tbsp of water mixed together. Let that sit for 5-10 minutes.

Add all the dry ingredients together, then add the lemon zest.

Next, add the vanilla extract, almond milk and flax eggs.

You’re going to use some muscles to mix this up! Mix around until all the ingredients are mixed well. It will take a few minutes to get it to a “wet” mixture. Then, you can roll it into small ball sized pieces and throw it in the oven for 15 minutes! I put almonds on some to experiment with it, but it’s not necessary.

I ran out of parchment paper, so ideally use that if you have it. If not, you can use coconut oil spray to make sure it doesn’t stick.

Let cool in a drying rack for about 10 minutes. Then enjoy 🙂

  • 3 tbsp flax meal
  • 9 tbsp water
  • 4 cups almond flour
  • 1 cup coconut sugar
  • 1/4 tsp baking powder
  • 1/4 cup whole wheat flour
  • zest of half lemon
  • 1/3 cup coconut shreds
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • pinch of sea salt


  1. Preheat oven to 350 degrees Fahrenheit.
  2. Put together the flax meal egg (if you are using this, if not skip this step). Mix 3 tbsp flax meal with 9 tbsp water in a bowl.
  3. Mix together all the dry ingredients.
  4. Add lemon zest and vanilla extract.
  5. Mix in flax egg or 3 eggs. Mix together, then add in the almond milk.
  6. Form into a ball and place into oven for 15 minutes.
  7. Cool for 5-10 minutes, then enjoy!
